From this article, it seems possible to set the input data attached to a transaction https://www.coinclarified.com/p/send-clear-text-message-on-evm-blockchains-with-web3-js/

How can I do that with the Moralis web3 Transfer function?

You can use the etherjs library that comes inbuilt with Moralis to encode messages in the transaction -
