I’m following the Rarible Clone YouTube Guide and he makes use of this in Moralis Server:
But this option no longer exists.
I checked the documentation here and I found Ivans old videos regarding Ganache setup, but they’re all outdated.
How can I work with Ganache on a local instance? Sorry for noob question but I couldn’t find any info on this myself

the interface may have changed, but it should still work to use Ganache and frp, you can also try to use moralis-admin-cli: https://docs.moralis.io/moralis-server/web3/setting-up-ganache#connect-through-the-moralis-admin-cli
now you can find those details in admin interface -> servers -> your server -> view details -> devchain proxy server

Where do you see devchain proxy server? I can’t find this in the view details menu.
that is only present when you create a dev server. It doesn’t appear on a testnet or a mainnet server.
